This weeks Independent Health's "Healthy Tailgating Recipe" winner is Beth Coughlin from Dunkirk.  Instead of grilling up the usual burgers and hot dogs for this Sunday’s Tailgating Party, why not change it up with some healthy & delicious grilled vegetables?  Or they can be a great addition to any main course, and there’s something healthy for everyone!  

Veggie Tailgate Grill

1 tablespoon olive oil

2 tablespoons apple cider vinegar

Two large zucchini

One package fresh mushrooms - sliced

Onions - sliced

One12 oz. canned diced tomatoes with green chilies

Season with pepper, garlic (or adobo), fresh oregano, mint and basil

2 tablespoons parmesan cheese

 

Mix, wrap in tinfoil and put on the grill!
