This week’s winning Healthy Tailgating Recipe comes from the kitchen of Nancy Dennis from Angola!  These delicious Stuffed Portabella Mushroom Sliders are meatless , and  definitely a healthy substitution for a greasy burger!

 

Stuffed Portabella Mushroom Sliders

6 Portabella mushrooms

3/4 C diced onions

1/4 - 1/2 C Parmesan cheese

Panko breadcrumbs

1-2 cloves diced garlic

1Tbsp. Olive oil

White cooking wine

Provolone cheese (optional)

 

Wash mushrooms and remove stems. Sautee diced onions and garlic in olive oil. Dice mushroom stems. When onions are tender add the mushroom stems and cooking wine to pan and sautee until cooked. Remove from pan and combine this mixture with Panko breadcrumbs and Parmesan cheese. Mixture should be slightly moist. Adjust breadcrumbs and cheese accordingly. Stuff the Portabella mushrooms with this mixture. Brush tops with olive oil and grill until warmed. If desired, provolone cheese can be melted on the top of the mushroom caps. Serve on slider rolls to have a meaty but healthy sandwich!
