Independent Health "Healthy" Tailgating Recipes Winner. Click For A Healthy Buffalo Chicken Wing Deviled Egg!

This weeks Independent Health's "Healthy Tailgating Recipe" winner is Gerald from Buffalo. Do you love spicy Buffalo chicken AND deviled eggs? So why not combine the two! Buffalo Chicken Wing Deviled Eggs are a great alternative to a Tailgating Party favorite, yet without the fried wings!


Ingredients needed:

One dozen Medium Eggs
1/2 cup Kraft Light Mayonnaise
1/4 cup Ken's Steak House Lite Chunky Blue Cheese
1/4 cup shredded chicken
3 tablespoons Frank's Hot Wings Sauce
Paprika

 

Fill a large sauce pan with hot water. Place on a burner set high. When the water boils so that you see a "rolling" boil, place the 12 eggs in the water. Set your timer for 10 minutes. After 10 minutes, remove the eggs from the water and let cool in the refrigerator for around 1 hour.

 

  • Gently remove the shell  from each egg. Slice each egg, in half, the long way. Scoop out the yellow egg yolk of each egg and add to a mixing bowl. Place the 24 eggs on a plate with the "hole" face up.
  • Add to the mixing bowl (with the egg yolks):
  • 1/2 cup Kraft Light Mayonnaise
  • 1/4 cup Ken's Steak House Lite Chunky Blue Cheese
  • 1/4 cup shredded chicken
  • 3 tablespoons Frank's Hot Wings Sauce
  • Hand stir so you do not crush the chunks of blue cheese.
  • Use a small teaspoon to scoop the yolk mixture into each egg dividing the mixture evenly between each. Sprinkle paprika on top of each finished egg.

 

This alternative to a party favorite is low in calories, low in fat and high in protein.

**For those who turn their nose up at the words "low fat" or "lite", the hot sauce will kill, overpower and flavor so there is no need to fear the taste of something being Healthy**
