“This week’s winning Healthy Tailgating Recipe is for Buffalo Chicken Stuffed Peppers. Instead of classic stuffed peppers with beef, the spicy Buffalo Chicken filling is a healthy, low carb, gluten free option guaranteed to spice up your next tailgate party!"

Buffalo Chicken Stuffed Peppers

INGREDIENTS:

  • 1 Whole Rotisserie Chicken shredded or 3 chicken breasts cooked and shredded
  • 2 tablespoons Greek yogurt
  • 1 cup shredded sharp cheddar cheese  (reduced fat or fat free)
  • 1 tablespoon blue cheese or ranch dressing
  • 4 or 5 Bell Peppers (Green, Orange, Red, Yellow)
  • ¼ cup Wing sauce (Franks Red Hot sauce)

DIRECTIONS:

  1. Combine the chicken, yogurt, 1/2 cup of cheese, dressing, wing sauce
  2. Cut your peppers in half down the middle, take off the stems and discard the seeds. Fill with your filling.
  3. Place peppers in a baking pan and add some water to the bottom of the pan so the entire bottom of the pan is covered in water (about 1/4 inch).
  4. Cover with foil and poke a few hole so the steam can release.
  5. Cook for about 25 minutes at 350 degrees, then remove the cover and take the 1/2 cup of cheese you saved and sprinkle over top of the peppers.
  6. Put them back in the oven and cook for another 5 minutes or until the top is golden and cheese is melted.
