24/7 Nachos loaded with ground turkey, beans & cheese

Ingredients:

  • 3/4 pound ground turkey
  • 1/2 teaspoon ground cumin
  • 1/2 teaspoon paprika
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon garlic salt
  • 1/4 teaspoon pepper
  • 1 teaspoons chili powder
  • 1/2 cup black beans rinsed and drained
  • 1 cup salsa mild or medium
  • 1 cup red pepper sliced
  • 1 cup yellow pepper sliced
  • 1 fennel bulb with outer layer removed & sliced in half
  • 1 cup zucchini sliced
  • 1 cup Mexican shredded cheese

Cooking instructions:

  1. Cook ground turkey on medium high heat until browned.
  2. Add seasonings and combine.
  3. Add black beans and salsa, then cook until warmed through. Set aside.
  4. Place fresh cut veggies on a platter that you can bake on. Put the meat mixture on top of your veggies & sprinkle with shredded cheese.
  5. Bake for 15 minutes at 350 degrees or until cheese is melted.
  6. You can also microwave for 5 minutes if you don't have time to bake it!
